Ingredients:

  • 2 cups shredded mozzarella cheese (full-fat)

  • 2 oz cream cheese (softened)

  • 2 large eggs

  • 1/4 cup grated Parmesan cheese (optional, for extra flavor)

  • 1 tbsp butter (for greasing the pan, or optional to brush on top after baking)

  • 1/4 tsp garlic powder (optional, if tolerated on your carnivore diet)

  • Salt to taste (use sea salt or Himalayan pink salt for better flavor)

  • Freshly ground black pepper (optional, use if your carnivore diet allows a minimal amount of seasoning

Instructions:

  1. Preheat the Oven: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it with butter.

  2. Prepare the Cheese Mixture: In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 20-second intervals, stirring in between, until the mixture is melted and smooth.

  3. Add Eggs and Seasonings: Allow the cheese mixture to cool slightly, then add the eggs, Parmesan cheese (if using), garlic powder, salt, and pepper. Mix until well combined.

  4. Shape the Buns: Spoon the mixture onto the prepared baking sheet, forming 6 to 8 bun-sized portions. Flatten each mound slightly with the back of the spoon.

  5. Bake the Cheese Buns: Place the baking sheet in the preheated oven and bake for 12–15 minutes, or until the buns are golden brown and firm to the touch.

  6. Optional Butter Brush: For a richer flavor, brush the tops of the buns with melted butter immediately after baking.

  7. Serve and Enjoy: Allow the buns to cool for a few minutes before serving. They can be enjoyed warm or at room temperature.
