Spinach and Cheese Frittata

Ingredients

6 large eggs

2 cups fresh spinach (roughly chopped)

½ cup shredded cheese (cheddar, mozzarella, or feta all work well)

¼ cup milk (optional, for fluffier texture)

1 small onion or shallot, finely chopped (optional)

1–2 tablespoons olive oil or butter

Salt and pepper to taste
Instructions

Preheat your oven to 375°F (190°C).

Whisk the eggs in a bowl with milk (if using), salt, and pepper.

Sauté the onion in an oven-safe skillet over medium heat until soft.

Add spinach and cook just until wilted (about 1 minute).

Pour in eggs and gently stir to distribute the veggies evenly.

Sprinkle cheese evenly over the top.

Cook on the stovetop for 2–3 minutes until the edges begin to set.

Transfer to oven and bake for 10–15 minutes, until fully set and lightly golden.

Cool slightly, slice, and serve.
