Ingredients

  • 1 cup sourdough discard

  • 1 cup finely shredded sharp cheddar (or cheddar + parmesan)

  • 2 Tbsp butter, melted

  • ½ tsp salt

  • Optional: garlic powder, paprika, black pepper

Steps

  1. Heat oven to 325°F / 165°C. Line a baking sheet with parchment.

  2. Mix everything into a thick batter.

  3. Spread very thin on parchment (almost translucent).

  4. Bake 20–25 min until set.

  5. Remove, cut into squares, return to oven.

  6. Bake another 10–15 min until crisp and golden.

👉 Cool completely—they crisp up more as they cool.


🌱 Sourdough Discard “Cheeze” Sauce (Vegan-style)

Great for pasta, nachos, or veggies.

Ingredients

  • ½ cup sourdough discard

  • ½ cup soaked cashews (or sunflower seeds)

  • 2–3 Tbsp nutritional yeast

  • 1 Tbsp lemon juice

  • 1 tsp Dijon or mustard powder

  • ½ tsp garlic powder

  • Salt to taste

  • Water to thin

Steps

  1. Blend everything until smooth.

  2. Heat gently on the stove, stirring, until thick and glossy.

  3. Adjust salt, lemon, or water.
