Smoked Carnivore Meat & Egg Casserole

Ingredients (1 Week Prep)

6 lb (2.7 kg) 88/12 ground beef

26 large eggs
-
3 lb bacon
-
10 Italian sausages (no sugar fillers preferred)

Optional (after cooking): butter or tallow for serving
No cheese. No spices. No seasoning.
Prep Instructions
Cook the meats separately
This keeps texture perfect and prevents grease pooling.
Ground Beef

Brown beef in a large skillet over medium heat

Cook until just done (not crispy)

Drain excess fat but leave some for moisture
Italian Sausage

Slice sausages into rounds

Pan-fry until fully cooked and lightly browned

Set aside
Bacon
-
Slice bacon into pieces
-
Fry until about 75% cooked (it will finish in the smoker)

Do not over-crisp
Prepare the eggs
-
Crack 26 eggs into a large bowl

Whisk thoroughly until fully blended
-
No salt, no seasoning
Assemble the Casserole
Use large disposable foil pans or heavy ceramic dishes.

Spread browned ground beef evenly across the bottom

Pour whisked eggs evenly over the beef

Layer sausage slices on top

Finish with bacon pieces spread evenly
Press gently so everything settles together.
