Oatmeal, Apple, and Carrot Muffins

Ingredients:
1. 2 cups (200g) rolled oats, chopped in a blender
2. 1 teaspoon baking powder
3. 1 cup (240ml) milk of your choice (e.g., almond, soy, or coconut milk)
4. 1 carrot, grated
5. 9 dried apricots, rinsed with hot water and chopped
6. 4 tablespoons raisins, rinsed with hot water
7. 1 apple, grated
8. 1 teaspoon cinnamon
9. 3 eggs
Instructions:
1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
2. In a blender or food processor, chop the oats until they resemble coarse flour.
3. In a large bowl, whisk together chopped oats, baking powder, milk, grated carrot, chopped apricots, raisins, grated apple, and cinnamon.
4. Add the eggs to the bowl and mix until well combined.
5. Divide the batter evenly among the muffin cups.
6. Bake for 25-30 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
7. Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
