High Protein Chicken Salad On Croissants

Ingredients:

  • 2 chicken breasts, cooked and shredded
  • 1/2 cup plain Greek yogurt
  • 2 tbsp mustard (Dijon or yellow)
  • 1/4 cup celery, diced
  • 1/4 cup red onion, diced
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 1 tbsp lemon juice (optional)

Instructions:

  • In a large bowl, combine the shredded chicken, Greek yogurt, mustard, celery, onion, and parsley.
  • Stir to combine and season with salt, pepper, and lemon juice if desired.
  • Chill for 20 minutes before serving. Serve on whole-grain bread, crackers, or over a salad!
