High Protein Chicken Salad On Croissants

Ingredients:

2 chicken breasts, cooked and shredded

1/2 cup plain Greek yogurt

2 tbsp mustard (Dijon or yellow)

1/4 cup celery, diced

1/4 cup red onion, diced

1 tbsp fresh parsley, chopped

Salt and pepper to taste

1 tbsp lemon juice (optional)
Instructions:

In a large bowl, combine the shredded chicken, Greek yogurt, mustard, celery, onion, and parsley.

Stir to combine and season with salt, pepper, and lemon juice if desired.

Chill for 20 minutes before serving. Serve on whole-grain bread, crackers, or over a salad!
