HEALTHY COOKIES – NO SUGAR! NO FLOUR

Ingredients:

  • 2 ripe bananas (for natural sweetness)

  • 1 cup rolled oats (gluten-free if you prefer)

  • 1/2 cup peanut butter or almond butter

  • 1/4 cup unsweetened shredded coconut (optional)

  • 1/4 cup dark chocolate chips or raisins (optional)

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • Pinch of salt

Instructions:

  1. Preheat oven to 350°F (175°C).

  2. Mash bananas in a bowl.

  3. Add peanut butter and vanilla, mix well.

  4. Stir in oats, coconut, cinnamon, salt, and chocolate chips or raisins.

  5. Scoop spoonfuls onto a baking sheet lined with parchment paper.

  6. Bake for 12-15 minutes or until edges are golden.

  7. Let cool and enjoy!
