Easy gluten free scone

✅ Ingredients:

2 cups gluten-free all-purpose flour (with xanthan gum, if possible)

1/4 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1/2 cup (1 stick) cold unsalted butter, cut into cubes

2/3 cup milk (or dairy-free alternative)

1 large egg
-
1 tsp vanilla extract
-
(Optional: 1/2 cup add-ins like blueberries, chocolate chips, or shredded cheese)
🥣 Instructions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together:

GF flour

Sugar
-
Baking powder

Salt

Cut in the butter using a pastry cutter or fingers until the mix resembles coarse crumbs.

In a separate bowl, whisk:

Egg
-
Milk
-
Vanilla
-

Add the wet mix to the dry ingredients. Stir gently until just combined.

If using add-ins, fold them in now.

Shape the dough into a circle (about 1 inch thick) on a floured surface (use GF flour). Cut into 8 wedges.

Transfer to baking sheet. Optional: Brush tops with a little milk for a golden finish.

Bake for 15–18 minutes, or until golden and cooked through.
💡 Tips:

If your flour doesn’t contain xanthan gum, add 1 tsp.

Use cold ingredients to get flakier scones.

For sweeter scones, sprinkle sugar on top before baking.
