A chicken bacon casserole sounds delicious! Here’s a simple recipe you can follow to make a hearty chicken bacon casserole:
Ingredients:
- 4 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 8 slices of bacon (chopped)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup frozen peas (optional)
- 1 tablespoon olive oil
- 1 teaspoon dried thyme (optional)
- Salt and pepper to taste
- 1 tablespoon butter
- 1 cup bread crumbs (optional, for topping)
Instructions:
- Prepare the oven: Preheat your oven to 375°F (190°C).
- Cook the bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside on paper towels to drain the excess fat.
- Cook the chicken: In the same skillet with a little bit of bacon grease (or add olive oil if needed), add the chicken pieces. Season with salt, pepper, and thyme, and cook until browned and cooked through (about 6-8 minutes). Remove and set aside.
- Sauté the onions and garlic: In the same skillet, add the butter and sauté the chopped onion for 3-4 minutes, until softened. Add the garlic and cook for another minute.
- Make the sauce: Pour in the chicken broth and heavy cream. Stir everything together and bring it to a simmer. Let it cook for 5-7 minutes to slightly thicken, then add 1 cup of shredded cheddar cheese, stirring until the cheese melts.
- Combine everything: Add the cooked chicken, crispy bacon, and frozen peas (if using) to the sauce. Stir to combine.
- Assemble the casserole: Pour the mixture into a greased 9×13-inch casserole dish. If you want a crunchy topping, sprinkle breadcrumbs and a bit more shredded cheese on top.
- Bake: Bake for about 20 minutes, or until the casserole is bubbly and the top is golden brown.
- Serve: Let the casserole sit for 5-10 minutes before serving.
Enjoy your cozy, cheesy chicken bacon casserole! You can even pair it with a simple green salad for a complete meal.
