Carnivore Bacon Cheese Muffins.

Ingredients (Makes 6-8 muffins)

  • 6 large eggs

  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)

  • 1/2 cup cooked bacon, chopped (about 6 strips)

  • 1/4 cup heavy cream (optional, for fluffier texture)

  • 1/4 cup grated Parmesan (optional for added flavor)

  • Salt to taste (optional – cheese and bacon are already salty)

  • Optional: 1–2 tbsp pork rinds (crushed), for added structure


Instructions

  1. Preheat oven to 375°F (190°C).

  2. Cook bacon until crispy and chop into small pieces.

  3. In a mixing bowl, whisk eggs and add heavy cream (if using).

  4. Stir in shredded cheese, bacon, Parmesan (if using), and optional pork rinds.

  5. Pour mixture evenly into greased muffin tins or silicone muffin cups.

  6. Bake for 15–20 minutes, or until the tops are golden and a toothpick comes out clean.

  7. Let cool slightly before removing from the pan.

  • Fridge: Store in an airtight container for up to 5 days.

  • Freezer: Freeze individually and reheat as needed.
