Bacon Cheese Burger Soup

Ingredients:

– 1 lb ground beef
– 6 slices of bacon, diced
– 1 large onion, diced
– 3 cloves of garlic, minced
– 2 cups of beef broth
– 1 cup of shredded cheddar cheese
– 1/2 cup of heavy cream (optional)
– Salt and pepper to taste
– Fresh parsley or chives for garnish (optional)

Instructions:

1. In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the cooked bacon from the pot with a slotted spoon and set aside.
2. Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.
3. Add the ground beef to the pot, breaking it up with a spoon as it cooks. Cook until the beef is browned, about 5-7 minutes.
4. Add the beef broth to the pot, scraping up any browned bits from the bottom. Bring the mixture to a simmer.
5. Reduce the heat to low and let the soup simmer for 10-15 minutes.
6. Stir in the shredded cheddar cheese until melted and smooth. If desired, add the heavy cream to give the soup a creamy texture.
7. Season the soup with salt and pepper to taste.
8. Serve the soup hot, garnished with cooked bacon, parsley, or chives, if desired.
