Easy gluten free scone

Prep Time: 10 mins | 🕒 Bake Time: 15–18 mins | 🍽 Serves: 8

✅ Ingredients:

  • 2 cups gluten-free all-purpose flour (with xanthan gum, if possible)

  • 1/4 cup granulated sugar

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes

  • 2/3 cup milk (or dairy-free alternative)

  • 1 large egg

  • 1 tsp vanilla extract

  • (Optional: 1/2 cup add-ins like blueberries, chocolate chips, or shredded cheese)


🥣 Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together:

    • GF flour

    • Sugar

    • Baking powder

    • Salt

  3. Cut in the butter using a pastry cutter or fingers until the mix resembles coarse crumbs.

  4. In a separate bowl, whisk:

    • Egg

    • Milk

    • Vanilla

  5. Add the wet mix to the dry ingredients. Stir gently until just combined.

    • If using add-ins, fold them in now.

  6. Shape the dough into a circle (about 1 inch thick) on a floured surface (use GF flour). Cut into 8 wedges.

  7. Transfer to baking sheet. Optional: Brush tops with a little milk for a golden finish.

  8. Bake for 15–18 minutes, or until golden and cooked through.


💡 Tips:

  • If your flour doesn’t contain xanthan gum, add 1 tsp.

  • Use cold ingredients to get flakier scones.

  • For sweeter scones, sprinkle sugar on top before baking.
