Steak with Garlic Cream Sauce

Ingredients:

For the steak:

  • 2 ribeye or sirloin steaks (about 1 inch thick)
  • Salt and freshly ground black pepper (to taste)
  • 1 tbsp butter (for searing)

For the garlic cream sauce:

  • 1 tbsp butter
  • 4–5 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese (optional but delicious)
  • Salt and pepper to taste
  • Optional garnish: chopped parsley

Instructions:

  1. Season & Sear the Steaks:
    • Pat steaks dry with paper towels.
    • Season generously with salt and pepper.
    • Heat a cast-iron skillet over medium-high heat. Add 1 tbsp butter.
    • Sear the steaks for 3–4 minutes per side (for medium-rare), or cook to your preferred doneness.
    • Remove steaks and let rest.
  2. Make the Garlic Cream Sauce:
    • In the same skillet, lower heat to medium.
    • Add 1 tbsp butter and minced garlic. Sauté for 30 seconds until fragrant.
    • Pour in heavy cream and stir.
    • Let simmer 2–3 minutes, then add Parmesan cheese (if using).
    • Stir until thickened. Season with salt and pepper.
  3. Combine:
    • Return steaks to the pan or plate and pour the garlic cream sauce over.
    • Garnish with chopped parsley (optional).

 Notes & Tips:

  • Don’t overcrowd the pan — sear in batches if needed.
  • Use grass-fed butter and cream for extra richness.
  • For even lower carbs, skip the Parmesan (though it adds a lovely depth).
  • Letting the steak rest allows juices to redistribute.
  • This sauce is also delicious on chicken or pork.
