Ingredients:
For the steak:
- 2 ribeye or sirloin steaks (about 1 inch thick)
- Salt and freshly ground black pepper (to taste)
- 1 tbsp butter (for searing)
For the garlic cream sauce:
- 1 tbsp butter
- 4–5 garlic cloves, minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese (optional but delicious)
- Salt and pepper to taste
- Optional garnish: chopped parsley
Instructions:
- Season & Sear the Steaks:
- Pat steaks dry with paper towels.
- Season generously with salt and pepper.
- Heat a cast-iron skillet over medium-high heat. Add 1 tbsp butter.
- Sear the steaks for 3–4 minutes per side (for medium-rare), or cook to your preferred doneness.
- Remove steaks and let rest.
- Make the Garlic Cream Sauce:
- In the same skillet, lower heat to medium.
- Add 1 tbsp butter and minced garlic. Sauté for 30 seconds until fragrant.
- Pour in heavy cream and stir.
- Let simmer 2–3 minutes, then add Parmesan cheese (if using).
- Stir until thickened. Season with salt and pepper.
- Combine:
- Return steaks to the pan or plate and pour the garlic cream sauce over.
- Garnish with chopped parsley (optional).
 Notes & Tips:
- Don’t overcrowd the pan — sear in batches if needed.
- Use grass-fed butter and cream for extra richness.
- For even lower carbs, skip the Parmesan (though it adds a lovely depth).
- Letting the steak rest allows juices to redistribute.
- This sauce is also delicious on chicken or pork.
