Ingredients:

  • 1 cup (120 g) all-purpose flour

  • 1 egg

  • 3 tbsp sugar

  • 1 tsp baking powder

  • 3 tbsp milk

  • 2 tbsp melted butter (plus more for brushing)

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or use paper liners.

  2. In a bowl, whisk egg, sugar, milk, melted butter, and vanilla until smooth.

  3. Add flour, baking powder, and salt. Mix just until combined—do not overmix.

  4. Spoon batter into muffin cups (about ¾ full).

  5. Optional: Add chocolate chips or a dab of jam to the center.

  6. Bake for 10–12 minutes, until golden and a toothpick comes out clean.

  7. Brush tops with a little melted butter when warm.

Enjoy warm!

They’re soft, buttery, and tender—perfect for breakfast or a sweet snack. Let me know if you want a yeast-based version too (takes longer, but fluffier and closer to classic brioche).
